Josie Beatrice Schenck was born June 16,1918, to Ole and Christina (Olson) Pederson in Murray County, Minn. She was baptized at the Ellsborough Lutheran Church near Ruthton, Minn. She was confirmed in the 17th class of the church on March 29, 1931, along with her brother Casper. The family farm was just down the road from the church, and as a young person, she enjoyed summer Bible School and singing in church with her sisters.

On Nov. 29, 1944, she was united in marriage to Floyd Schenck in California where he was stationed in the Navy. The couple made their home in Albert Lea, living on Third Street for many years before moving to Shady Oaks Apartments in 1989. She had been at the Good Samaritan Center since June 2, 2004.

Josie was a kind, fun and loving mother and grandmother to her children, grandchildren and great-grandchildren. She enjoyed doing word puzzles, music, family gatherings, and going for a ride and stopping for pie and coffee. Before her body and mind started to fail her, she liked to bake for her family, especially lemon pies and chocolate cakes. Even as she dealt with the frustrations of a failing body and mind, attending church continued to be one of the highlights of her life.
