Next episode of ‘Uffda Kitchen’ is out

The Food & Drink page is updated every Monday night or Tuesday morning. Today, it features the second episode of “Uffda Kitchen” and an award-winning recipe.
In the second episode of “Uffda Kitchen,” Tim and Forrest Engstrom create a meal called Pesto Plus. It is rotini pasta with pesto from a jar. However, the plus is the addition of toasted and chopped pine nuts and plentiful shakes of basil leaves and garlic powder, all held together with olive oil.
The meal is quick and simple, but it is very tasty, too. Forrest, a 2-year-old, loves it.
The Featured Food on the page is the award-winning recipe for Moosewood Blueberry Pound Cake by Albert Lea resident Carol Wolter. The dessert was named a winner at the Vitality Potluck in Albert Lea on Sept. 26.
Both dishes are good in how they incorporate healthy items. The Pesto Plus adds nuts to your main dish and the Moosewood Blueberry Pound Cake adds fruit to your dessert. Yummy and good for you.
